Bobal Variety from Very Old Strains

Vineyards Smallholdings of very old glass and dry vineyards at the foot of the mountains and on slopes located in the Hoces del Rio Cabriel Natural Park in the interior of the province of Valencia.
Preparation Manual harvest in 10 kg boxes that takes place at the end of September and beginning of October. followed by 2 days of cold maceration of the grapes at 2oC. 100% of the wine undergoes alcoholic fermentation in stainless steel tanks at controlled temperatures.
Aging 50% of the wine passes through 500l French barrels used from various harvests and matures on its lees for 6 months before being bottled.
Tasting notes Intense, attractive and seductive nose, highlighting the crisp red fruit and
a light aroma of blue flowers. On the palate it is dry, fresh, light and smooth with a pleasant silky texture that makes it an easy-drinking wine.
Recommendations Serve fresh between 12 to 14oC and it will accompany very well all types of sausages,
cheeses, ham, grilled meats, pastas, chicken and rabbit paellas and complex and elaborate gastronomy such as seasonal mushrooms, truffles, etc...
