Lazarus Syndrome is our homage to spontaneous fermentation. A product unique to our brewery that can never be replicated. We aim to create a flavour that is connected to the terroir of our brewery and the spaces we bring our coolship. In the true sense of our brewery we do not adhere to any rules or guidelines in the process of making this product. Our goal with this series is to offer distinctive flavour profiles that are a result of our location. The aim is to grow the program to 100% spontaneous blends that are unrepeatable and deeply complex.
Our first offering is a blend of one and two year spontaneous with 15% barrel aged golden sour. Aromas of stone fruit and hay are complimented with bright citrus acidity. Fleshy fruit and mustiness are brought to life with natural effervescence. 7% ABV
